I started baking at quite a young age but only got into it professionally about five years ago when I started working at The Dusty Knuckle. I learnt loads working there - about bread and hard graft - as well as making some life-long friends. I became really interested in flour! As the main component of all baked goods it can get quite overlooked - but as a baker I think it's very important to know about this key ingredient.

At I Said Bread we focus on UK-grown cereals (in the UK we have a heavy reliance on imported grain) that are grown in a way that respects the environment. That is without the use of chemical fertilisers and pesticides, whether that is certified organic or not. We also want to use grain that can be traced back to the farmer that grew it and the millers that milled it, while experimenting with heritage/population/landrace varieties.
All our loaves are made using a sourdough starter which enhances the flavour of the grains and makes it easier to digest. Currently we are supplying bread to Sheffield through two local veg bags schemes
